Staub advertises that its nubby lids keep liquids inside the pot, yielding moist, tender braises. In our 2015 testing, the Staub did lose the least amount of liquid during cooking, but that left us with a watery, less concentrated stew that we didn’t enjoy as much as the richer stews made from other ovens. At the time of this writing, Le Creuset’s oven costs nearly five times as much as the Lodge oven. But for home cooks who want the absolute best pot, this oven’s durability and generous lifetime warranty may be worth it. The brand is beloved by professional and home cooks alike, and in our experience these pots can last for decades.

Cuisinart cookware collections are famed for not only its wide range, but the technology that backs them too. We love a cookware manufacturer that has been in the market for a long time – but love alone doesn’t get the food done the right way. We recommend the French Classic Tri-Ply cookware set over every other one on Cuisinarts lineup.
Cuisinart stainless steel cookware is induction compatible except for their Copper Tri-Ply collection, which has a copper exterior that won’t work on induction cooktops. Each pot and pan has a cast stainless steel handle attached to the base of the cookware with steel rivets. Their handles fork as they get closer to the pan, which diminishes the heat keeps them cool. All Calphalon stainless steel cookware features a brushed exterior finish except for the Calphalon Tri-Ply collection, which is polished.

The Cuisinart Classic Hard Anodized has sets from 7 pieces to 17 pieces. Cuisinart only offers tri-ply construction with two steel layers surrounding an aluminum core. If the handles are loose or broken, or the bottom of a pan is warped , it’s time to shop. And of course, when the coating of a nonstick pan is flaking, it’s got to go. The lid comes with a stainless-steel knob that’s oven safe at any temperature. You can also get a phenolic (a type of heat-proof plastic) knob, which the company says is oven-safe up to 500° F. At 11.9 pounds, Le Creuset’s oven is one of the lightest we tested (it’s 3 pounds less than the Lodge), making it the easiest to lift even when full. Le Creuset makes ovens in a wider range of sizes and colors than Lodge. The company also makes unique pots in whimsical shapes, like hearts, but we don’t recommend those from a practical standpoint.
While this didn’t impact our bean dish, we did find that our chicken dish was dry and not as tender as we would have liked. If it doesn’t have a timer, make sure to set an alarm for yourself so you know when to turn it off or to flip it manually to “keep warm.” And while you’re cooking, don’t open that lid too often to check on the food. Allowing the heat to escape could tack on another 15 to 20 minutes of cooking time. Program mode lets you select a time and temperature, while manual mode simply lets you cook on low, high or warm.
